After kickboxing I needed something quick and delicious: leftover ribs with guacamole and mango salsa!
First time making #whole30compliant mayo! I’m so pleased with the result. Added in roasted garlic & Italian herbs 😍 Made coconut crusted chicken fingers to dip, with spicy zucchini/eggplant noodles on the side! I’m in love with my standing blender and julienne peeler…
Wasn’t too hungry for breakfast so I decided to step it up for lunch! Leftover pork rib meat sautéed with rainbow chard, served with guacamole, mango & grapes! Colorful & delicious.

Salmon, guacamole & plantain chips for lunch 😍 seasoned everything in smoked paprika & franks red hot.
Weekend pancakes with @jml_stone 😁 Made with egg, banana, almond flour & cinnamon. Topped with warm raspberry & blackberry purée, crushed macadamia nuts and dried coconut flakes!
